When it comes to spring mocktail season, I like to play with something bright and light. This mint and thyme mocktail is easy to make and perfect for something in the afternoon.

Backyard Party
Mocktail

Ingredients
1 oz Lemon Juice
1 Sugar Cube
2 Sprigs of Thyme
6 Mint Leaves
Top with Sparkling Water
Garnish: Mint Leaves and a Sprig of Thyme

Recipe: In a cocktail shaker, muddle sugar cube with thyme and mint leaves. Break the sugar cube up nicely to really make the most of it and get the mint and thyme to open up flavor wise. Add ice and then pour lemon juice. Dash in the edible white glitter if you have it. Close and shake until cold to the touch about ten to fifteen seconds. Double strain into a highball glass with ice. Top with Sparkling water. Garnish with mint leaves and a sprig of thyme.
